All of Living Water Ranch's Beef Suet is from our 100% Grass-Fed Cows. As such, it has the characteristic tint of cream to yellow that one would expect from a truly Grass-Fed animal’s diet. Beef Suet is the raw, hard beef fat found around the loins and organs of cattle. Due to the relatively high melting point, between 113 °F and 122 °F, and congealing between 98.6 °F and 104 °F, it is a treasured item in pastry production and even for deep frying due to a hint of naturally beefy flavors and its high smoking point. Tallow, or Beef Suet after rendering, is primarily used as an ingredient in cooking traditional baked puddings, like British Christmas Pudding. To make tallow, one would simply melt the Beef Suet, simmer, strain, cool, and repeat the entire process as desired. One word of caution, as it hardens quite a bit: Never pour beef fat down your drains.
